Power Coffee Rub Flank Steak
2 tablespoons chili powder
2 tablespoon brown sugar
2 tablespoon sea salt
3 tablespoon finely ground coffee
2 teaspoon coarsely ground black pepper
3 tablespoons olive oil
3 lbs flank steak (grass-fed)
Preheat grill to 400° to 450° (high) heat. Stir together ingredients; rub olive oil over steaks and add rub. Let stand 30 minutes.
Grill 3 to 5 minutes on each side or to desired degree of doneness. Let stand 5 minutes. Cut across the grain into thin strips.
I just cooked this up for Jesse Burdick and Mark Bell at Mark's house in Sacramento. It was pretty damn good...I know this only serves one, but Mark and Jesse Burdick are around, make extra.
