HOLY GUACAMOLAAAYYYY! Need we say more? The average person eats 7 pounds of avocados a year (thank you Google). Here at Power Athlete we do not like to settle for average. This guac, executed as a dip or as a condiment, is delicious. Whip it up in 10 minutes and you have an easy way to add in fat and some ROYGBIV to your beef tacos, eggs, or spoon.

Ingredients:

4 ripe avocados

1 TBS minced garlic

¼ red onion, finely chopped

¼ cup plain Greek yogurt

1 jalapeno seeded and finely chopped

Juice of one medium lime

1 roma tomato, diced

½ tsp cumin

Salt and pepper to taste

Directions:

  1. Prep all of your veggies.
  1. In a large mixing bowl, mash the avocados with a fork.
  2. Add in the garlic, red onion, jalapeno, salt, pepper, and yogurt and mix until your desired chunkiness. By adding more Greek yogurt you will get a smoother consistency.
  1. Once everything is combined, gently mix in the tomato.
  2. Serve with tortilla chips, cut veggies, on a burger, on tacos… or eat directly off the spoon!
