Forget the Godiva chocolates and roses nothing says I love you more than this bacon wrapped heart shaped meatloaf. Treat the one you love, lust or yourself to this Valentine’s comfort food; it’s easy to make and sure to warm their heart.
This meatloaf is wrapped in a nice cozy blanket of bacon which seals in the juices and flavor making for a moist and satiating main course. Choose your favorite sides; I went with mashed potatoes and spinach sauteed in olive oil and garlic. Serve with a side of ketchup or not.
Turn down the lights, put on the Barry White and kick back and enjoy. On second thought guys — the chocolates and roses would be a nice gesture and probably get you a few brownie points on Valentine’s day. Just sayin’. . .
Recipe & Ingredients
1 lb grass fed ground beef
1 lb pastured pork
2 tbs coconut oil or butter
1 onion, diced
2 cloves garlic diced
1/2 cup carrots, chopped
1/2 cup celery, chopped
1/2 cup red bell pepper, chopped
1/4 white wine
2 eggs, slightly beaten
1/4 teaspoon gelatin
1 tsp sea salt
1/2 teaspoon freshly ground black pepper
ketchup (optional)
Serves: 2
Preparation
Preheat the oven to 375 degrees. Combine ground beef and pork in a large bowl. Set aside.
Heat 2 tablespoons of coconut oil or butter in a cast iron skillet over medium heat. Saute the onion, garlic, carrots, celery and bell pepper until just tender (6 to 8 minutes). Add the white wine and simmer briskly until wine evaporates, about 4-5 minutes. Remove from heat and cool slightly.
In a small bowl slightly beat the eggs, sprinkle the gelatin over them and let stand for 5 minutes. Add the vegetables, egg mixture and salt and pepper to the meat. Stir gently with your hands until just combined. Do not over mix.
Shape into a large heart
Layer with overlapping crosswise strips of baking covering the meat as much as possible. Trim the ends, leaving a 1/2 ” overhang. Gently tuck the overhang under the meatloaf. Use additional strips, trimmed as necessary, to patch any uncovered areas.
Dot with ketchup (if desired) and spread gently over the bacon. Bake for 45 – 50 minutes or until an internal temperature of 160 degrees. Turn the heat to broil for 3 – 5 minutes to crisp up the bacon. Watch carefully. Let stand for 10 minutes before slicing.
