I cooked these up last night for dinner and they were gone before I went to bed. The kids loved them and I am not sure I have made burgers this flavorful in a while.

Mint Lamb Patties with Tzatziki Sauce

INGREDIENTS:

Lamb Patties:

3 lbs Ground Lamb
1 cup mint leaves (chopped up fine)
1/2 cup minced onion
4 cloves garlic (minced up fine)
1.5 tsp sea salt
1 tbs coconut oil

DIRECTIONS:

Preheat oven to 325 degrees. Then in a large bowl, combine the ground lamb with mint, garlic and onion. Add salt to the bowl and mash it up with your hands. Make the burgers in 6 “baseball” sized patties. Heat a skillet on high/med heat and add coconut oil. Once it is hot, add burgers and cook for 2 minutes per side. Once you have cooked both sides, put the skillet in the oven and cook for 6-8 minutes depending on how you like the cooked. Pull them out of the oven and let them sit for a few minutes, serving with cold Tzatziki sauce on top.

Tzatziki Sauce:

INGREDIENTS:

3 cups Greek Yogurt (Full Fat)
Juice of one lemon
1 garlic clove, chopped
2 medium cucumbers, seeded and diced
Sea salt
1 tbs fresh dill (finely chopped)

DIRECTIONS:

Put the cucumbers, garlic, lemon juice, dill, and black pepper into food processor and process until cucumbers are finely chopped. Then stir the cucumber mixture into the Greek yogurt. Stick this in the refrigerator for at least 2 hours before serving.
