With all the great protein options here on land, it can be easy to forget about the options swimming in the seas. Sure it’s hard to beat a great steak, but varying your protein sources can better guarantee you’re getting a complete macro (and micro) nutrient profile from your food, and can even potentially help to avoid developing food allergies from overeating only a few select choices. Salmon is a great source of both protein and those healthy omega-3 fatty acids, and this recipe is a nice way to add some kick in to your mealtime.
Ingredients:
2-3# salmon
3 TBS olive oil
1 TBS coconut aminos
1 TBS honey
Zest of one lemon (save lemon for later)
2 tsp minced garlic
1 tsp Italian seasoning
Salt and pepper to taste
Preparation:
- Mix together marinade ingredients in a small bowl
- Lay the salmon out in a 9×13 glass baking dish, or on a sheet pan
- Salt and pepper both sides of the fish
- Pour marinade over the fish and let sit for 1-3 hours
When you are ready to cook dinner:
- Preheat oven to 450 degrees
- Place marinated fish in the oven, skin side down
- Bake for about 15 minutes, or until the fish is flaky and moist
This fish is delicious served over rice and a bed of arugula.
