When you hear protein with a face and a soul, what comes to mind? Probably the standard ruminant like cows, buffalo, deer, and sheep. But what about those faces and souls that swim in the sea? Oceans cover 70% of the earth, which means there is a LOT of variety in there. However, a lot of folks tend to get turned off by the “fishiness” of some of those tasty, swimming souls. Enter Whitefish. Whitefish is a catch all term generally applied to mildly flavored, quicker cooking fish that also tends to be a little easier on the wallet. Ingredients:
2 pounds white fish
2 TBS avocado mayo
2 TBS Dijon mustard
2 tsp chives, finely chopped
Zest and juice from one lemon
Salt and pepper
2 TBS grated Parmesan cheese
Directions:
Preheat oven to 450°.
Combine mayo, mustard, chives, lemon juice and zest. Set aside.
Line a baking sheet with foil.
Season fish fillets on both sides with salt and pepper.
Put a thin layer of mayonnaise on top of one side of the fish and sprinkle cheese over the fish.
Bake it at 450° for 10 minutes an inch, measuring the fish at its thickest point.
