When people start up with us as nutrition coaches, they’re used to hearing some things over and over. No, pizza is not a vegetable. No, chips aren’t the same thing as potatoes. Yes, you really need to each that much protein (trust me, you’ll want to). You know what we don’t tell them though? No, you can’t ever have dessert.
Yep, you heard me, desert. It’s not often you’ll find “nutrition plan” and “dessert” in the same sentence, but I’m here to tell you it CAN happen; it’s just about balance and choosing the best option. These Almond Joy Fat Bomb Bars will scratch that sweet-tooth itch of yours without blowing your macros out of the water. And the best part? They are made with only a handful of ingredients that tend to live in the pantry already. But a word to the warning: These bars are ADDICTING! Like…really addicting.
Ingredients:
Base:
1 cup almond flour
1 cup coconut flour
½ cup sugar free maple syrup
Chocolate Top:
100g dark chocolate
1 TBS coconut oil
¼ cup shredded coconut
Directions:
Line an 8×8 glass pan with parchment paper.
Combine the almond flour, coconut flour, and maple syrup in a bowl and press into the baking dish.
Melt together the chocolate and coconut oil in the microwave, stirring occasionally until smooth. Start with 60 seconds, and then go from there.
Pour the chocolate mixture over the base and spread evenly. Sprinkle shredded coconut flakes on top and put in the freezer until the chocolate is solid, approximately 60 minutes.
This is delicious and stores well in the refrigerator for up to 5 days.
Cut into 16 squares.
