This recipe is ridiculously easy and delicious. All you need to prepare are measuring spoons, a bowl, and a 9×13 baking dish. The chicken thighs are a unique blend of sweet and spicy and the chicken goes really well on top of a mixed green salad or on rice.
Ingredients:
4 pounds boneless skinless chicken thighs
1 jar apricot preserves/ fruit spread (10 oz)
1 TBS minced garlic
1 TBS chopped dried onion
½ tsp red pepper flakes
Salt and pepper
Directions:
1. Preheat oven to 375 degrees
2. Combine apricot spread, minced garlic, chopped dried onion, and red pepper flakes in a small bowl
3. Put the chicken thighs in a 9×13 pyrex pan
4. Salt and pepper the chicken thighs
5. Evenly spread the apricot mixture on top of the chicken and bake approximately 45 minutes, or until the chicken is cooked through and the juices run clear
6. Pull out of the oven and serve with your favorite veggies and rice!
