Trigger warning: yes these are gluten free, no they are not “healthy.” These ooey gooey cookie bars are not for the faint of heart. Promising a whopping 20 grams of protein if you eat the entire pan, I cannot in good faith recommend it as your main source of protein.
**For these bars you are going to need 3 separate bowls to mix the ingredients in, and if you have access to a KitchenAide I would recommend busting that bad boy out.
Ingredients
¼ cup (1 stick) butter
¼ cup plain Greek yogurt
3/4 cup honey
1 egg
1 egg yolk (saving the white for later!)
1 ½ cups gluten free flour
1 teaspoon baking powder
½ teaspoon salt
1 egg white (use from earlier)
1/2 cup coconut sugar
¾ chocolate chips, preferably semi sweet or dark chocolate
Cooking spray to grease pan
Directions:
- Preheat the oven to 350 degrees and prepare a 9×9 baking sheet by greasing it with cooking spray or butter.
- Combine butter and Greek yogurt in a mixing bowl or electric mixer with the paddle attachment and mix on low speed until combined. Add in the honey, continuing to mix. The butter will not be completely smooth like a normal batter, but this is okay!
- Add in the whole egg yolk and egg yolk and mix until combined.
- In a separate bowl, whisk together the gluten free flour, baking powder, salt, and salt. Slowly add this mixture to the wet ingredients and mix until smooth being careful not to overwork.
- In a small bowl mix together the egg white, coconut sugar, and chocolate chips.
- It is now time to put the batter into the prepared baking dish. I used a spatula sprayed with cooking spray to help the batter not stick. Because honey was used, it takes a little more patience than a normal dough to evenly spread in the pan.
- Once the dough is evenly in the pan, spread the egg white, sugar, and chocolate chip mixture on top.
- Place in the oven and bake for approximately 35 minutes at 350 degrees, or until a toothpick comes out clean.
- Let cool, slice, and enjoy with a big glass of milk!
