Did someone say comfort food? The creamy garlic mashed potatoes layered on savoury, juicy ground beef makes for a perfectly hearty meal for the cooler months. Fun fact: a cottage pie can sometimes be confused as a shepherd’s pie, which is traditionally made with ground lamb!

Ingredients:

BEEF MIXTURE

  • 2 tbsp avocado oil
  • 2lb grass fed ground beef
  • 1 cup carrots diced
  • 1/2 cup peas
  • 1/2 cup corn
  • 1 onion – diced
  • 2 cloves garlic – minced
  • 1 cup beef broth
  • 2 tbsp tomato paste
  • 1 tsp fresh thyme – minced
  • 1 tsp fresh rosemary – minced
  • 1 tsp fresh parsley – minced
  • 1 tsp salt
  • 1/2 tsp ground black pepper

GARLIC MASHED POTATOES

  • 2.5 lb yellow potatoes – peeled and cubed
  • 4 cloves garlic – peeled
  • 1/2 cup beef broth
  • 2 tbsp ghee/butter
  • 3 tbsp nutritional yeast
  • 1/2 cup coconut milk (or milk of your choice)
  • 1 tsp salt
  • 1/2 tsp ground pepper

METHOD

MASHED POTATOES

Step 1: Preheat oven to 400

Step 2: Place potatoes and garlic cloves in a pot filled with water and salt generously. Bring water to a boil and reduce to simmer until potatoes are cooked until tender – about 12-15 minutes. Fork test – if you stick a fork in a potato it should slide right off. 

Step 3: Drain the potatoes and garlic and leave them in the pot. In a separate sauce pan – heat beef broth, ghee, coconut milk, nutritional yeast and salt/pepper. Mix until fully combined and brought to a simmer. Slowly add half of the mixture to the potatoes

Step 4: Mash potatoes until desired consistency and add the rest of the mixture to the potatoes with taste tests along the way to determine your desired taste/consistency

GROUND BEEF MIXTURE

Step 1: Drizzle olive oil onto a pan and heat until medium-high. Add onions and cook until golden brown. Stir occasionally to avoid burning

Step 2: Add the ground beef to the pan and break it apart with a wooden spoon. While beef is browning add thyme, rosemary, parsley, salt and pepper. Cook until beef is browned and stir occasionally. About 6-8 minutes

Step 3: Create a pocket in the middle of the pan and add  garlic and tomato paste and stir to combine. Cook for an additional 1-2 minutes

Step 4: Add in carrots, peas, carrots, beef broth and allow to simmer for 5 minutes. Stir occasionally

PUTTING IT ALL TOGETHER

Step 1: In a cast iron skillet or baking dish, layer in the ground beef 

Step 2: Top off with the garlic mashed potatoes and smooth over the ground beef using a spoon or spatula

Step 3:  Bake for 25-30 minutes, until the mashed potatoes are golden brown

Step 4: Remove from oven and allow to sit for 15 minutes before serving hot!
