| | FLANK STEAK WITH CHIMICHURRI

Level up your steak game by pairing it with a famous sauce from Argentina! This recipe is simple and flavourful. The chimichurri sauce should be made a minimum of 2 hours before serving with your steak to allow the flavours of the herbs, garlic and vinegar come together. Sometimes made with raw garlic, this recipe calls for roasting it ahead of time for a creamy and buttery addition. Keeping the seasoning of the steak simple, it pairs PERFECTLY with the chimichurri sauce. A match made in heaven!

Ingredients:

For the Steak

  • 2lb Flank Steak
  • Olive Oil
  • Salt
  • Pepper
  • 1/2-1 tbsp Butter/ghee

For the Chimichurri

  • 1/2 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 bunch parsley
  • 1 garlic head- roasted
  • 1 red chili
  • 3/4 tsp dried oregano
  • 1/2-1 tsp salt
  • 1/2 tsp fresh ground pepper

METHOD

Step 1: Prepare the chimichurri sauce 2 hours minimum before serving with the steak. Preheat oven to 400 degrees. 

Step 2: Peel and remove the flaky outer layers of the whole garlic, but leave the individual skins of the garlic. Cut off 1/4 inch from the top of the cloves. Place garlic in a baking pan , drizzle with olive oil over the cut exposed tops of the garlic. Wrap in aluminum foil and bake for 30-40 minutes, or until the cloves are lightly browned and feel soft when pressed 

Step 3: Once the garlic is roasted, add to food processor or high power blender along with the rest of the ingredients. Blend until minced – do not over process as it will turn into a thick paste

Step 4: Allow steaks to become room temperature for 30-60 min. Drizzle steak with some olive oil and season with salt and pepper

Step 5:  Preheat cast iron pan to medium high heat. Add ghee to hot pan and allow to melt and heat until shimmering

Step 6: Place the steaks in the skillet for 3 min without touching. Flip the steak and allow to cook for another 3 minutes. Transfer steaks to cutting board and allow to rest for 5 minutes before slicing and serving

Step 7: Plate steak and top with a generous amount of chimichurri sauce. Dig in and enjoy!
